Industry Guides to Food Hygiene Practice can also be purchased from at the Chartered Institute for Environmental Health’s (CIEH) shop. These are the official guides on how you can comply with the Food Safety (General Food Hygiene) Regulations 1995 and the Food Safety (Temperature Control) Regulations 1995, and ensure food safety.  These guides also give advice on hazard analysis. There are several different food guides including: Retail, Catering, Fresh Produce and Markets and Fairs.
